Cucumber Salsa

INGREDIENTS

  • 4 cucumbers (diced)
  • 10-12 green onions (thinly sliced)
  • 1/3 cup rice wine vinegar
  • 2 tsp sesame oil
  • 2 tbsp real lime juice (fresh squeezed is best!)
  • 2 tbsp minced ginger (prefer real ginger root from the fresh produce section)
  • 1 tbsp minced jalapeno (recommend jarred, better flavor)
  • ¼ cup fresh cilantro (fresh is key)
  • 2 tbsp sugar (Splenda or Truvia substitute is fine)

DIRECTIONS

  1. Combine all ingredients in large bowl.
  2. Serve immediately.  Or better yet, stick it in the fridge overnight to let the flavors have a party.
