INGREDIENTS
- 4 cucumbers (diced)
- 10-12 green onions (thinly sliced)
- 1/3 cup rice wine vinegar
- 2 tsp sesame oil
- 2 tbsp real lime juice (fresh squeezed is best!)
- 2 tbsp minced ginger (prefer real ginger root from the fresh produce section)
- 1 tbsp minced jalapeno (recommend jarred, better flavor)
- ¼ cup fresh cilantro (fresh is key)
- 2 tbsp sugar (Splenda or Truvia substitute is fine)
DIRECTIONS
- Combine all ingredients in large bowl.
- Serve immediately. Or better yet, stick it in the fridge overnight to let the flavors have a party.
